+ GRAPES: Organic. Equal parts Syrah and Grenache, grown on the limestone/shist soils of Corbieres in Languedoc, France.
+ PROFILE: Dry. Light-medium body, with racy acidity. A touch reductive on the nose, but the wine's clean. There's raspberry pastille, some Mediterranean herbs, a touch of spice on the mid-palate. Blood orange, citrus pith, red zinger tea, and pomegranate. Textural with a light spritz. Enjoy with a slight chill - not too cold - and any sort of fare from the grill.
+ FUNDAMENTALS: Hand-harvested grapes, wild yeast. Short carbonic maceration keeps things light and fresh [with a pleasant suggestion of spritziness on the finish]. Unfined/unfiltered. Low added sulfur; just a touch at bottling.
