+ GRAPES: Sustainable. 100% Assyrtiko grown at high elevations in the Peloponnese region of mainland Greece. 

+ PROFILE: Dry. Medium + body, with a lovely viscous texture. White flowers and verbena on the nose. Herbal lemon, stone fruit, pear, mineral, saline notes and balanced acidity. Long, complex finish. This wine gives Chardonnay in the best possible way. An exceptional value. 

+ PAIRINGS: I'm a fantastic fish wine, but would also shine as an aperitif, or with classics like a mixed grill, greek salad, taramasalata and friends.

+ FUNDAMENTALS: All stainless steel winemaking using wild yeast for fermentation. The wine then spends four months on the lees, lending some richness and body.
