+ PROFILE: Dry. Medium body, medium + acidity. Silty tannins. Violets and Luxardo cherries on the nose. Dark plum, blackberry, Marasca cherry, bergamot oil, iron minerality on the long finish.
+ FUNDAMENTALS: Low intervention, but extremely stable. Fermentation in local stone vats, aging in large, neutral-oak barrels. Wild yeast. No fining or filtration [vegan]. Age-worthy. 11% ABV.
+ PAIRINGS: Sausage, porchetta, your next salume platter. Pasta Carbonara, chicken-liver mousse.
+ ABOUT: Skerk is a tiny, family-run producer based in Carso. This designation is used only in Carso, a small growing area in Friuli-Venezia Guilia that borders Slovenia. The soil here is rocky, porous limestone overlaid with a layer of iron-rich soil, which shines through in the wine.
