+ GRAPE: Organic, sustainable. 100% Chardonnay grown in the Santa Cruz mountains.
+ PROFILE: Courtesy of the winemaker - Aromas of pineapple, lemon meringue, pear, brioche, apricot, dried flowers, ginger, flint, and sweet oak. Medium-bodied with a soft entry layered with fruit, acid, oak, and a round, full mouthfeel. The finish is long and clean.
+ FUNDAMENTALS: Grapes are whole-cluster pressed into barrel with wild yeast. Undergoes natural primary and natural secondary (malolactic) fermentations. Aged in barrels: 15% are new, with a breakdown of 80% American and 20% French oak. Minimal effective sulfur. Age-worthy: six to seven years. 14.3% ABV.
