+ PROFILE: Pure agave flavor, with hints of caramel, grilled fruit, and white pepper, makes for easy drinking. Smooth when enjoyed neat, or fabulous in a Margarita.
+ MAKING OF: NOM 1531. Cooked in stone ovens and extracted by roller mill. Fermented in stainless steel with wild yeast, before being distilled twice in a stainless steel still using copper coil.
+ THAT'S QUITE SOMETHING: Juan Rejon is a drummer who has toured extensively in Mexico. When the tours are over, he takes a backpack and 'loses himself in the mountains.' This adventurous way of life has led to some trouble— he’s been kidnapped twice, and has escaped twice (!) — but along the way he has also discovered some incredible artisanal tequilas in the heart of Jalisco. This led him to start his own import-export business.
