+ GRAPES: Organic growing. Mencia-based blend, together with Trousseau, Alicante Bouchet, and Caino. Grown on the steep granitic slopes of Ribeira Sacra in Galicia, Spain.
+ PROFILE: Dry, medium body, silky tannins. Dried flowers on the nose, followed by woodland berries, citrus peel, and crunchy granitic mineral tones. Complex and beautiful.
+ FUNDAMENTALS: Whole-cluster grapes fermented using only wild yeast in stainless steel tanks. Finished by aging for one year in a combination of large, 1,500 Liter and 500L used oak barrels. Unfined, unfiltered. Low sulfites. Vegan.
