+ GRAPE: 100% Pais [a.k.a. Listan Negro or Mission] grown on decomposed granite in coastal Chile. Old-vine to say the least: they are 150 years old! And totally ungrafted since Phylloxera thankfully never reached this area.
+ PROFILE: Wowza. A completely different interpretation than more 'rustic' styles of Pais. Wild blue iris on the nose. Earthy cherry, bright red berries, blue stone, sage, and quartzy minerality. Smooth, with a suggestion of a Pineau D'Aunis-style pepperiness and balanced acidity on the finish.
+ PRO TIP: This bottle is a touch closed out the gate: open the bottle and pop it in the fridge for ~ 20 minutes for the wine to really shine.
+ FUNDAMENTALS: Hand-harvested, destemmed, wild yeast. Vinified entirely in stainless steel tanks. Unfined, unfiltered, vegan. Just a small amount of added sulfur (<15ppm). 12% ABV.
