+ SO THIS IS COOL: It's actually a rare old Champagne clone of Pinot Noir, known as 'Pinot Droit'. Grown on a tiny one-hectare plot in the Bugey region of the Savoie, France. This Pinot clone is uniquely suitable for the producer's lower-plains growing zone, where it's harder to ripen red grapes.
+ PROFILE: A fine bistro wine! Dry, complex, light body. Waxy sour cherry, lingonberry, stony minerals. Finish has Nebbiolo-like tannins and bright acidity. Wild yeast, zero oak.
+ FUNDAMENTALS: Sustainable growing. Grapes are hand-harvested, destemmed, and the producer uses only wild yeast and stainless steel. No sign of oak to be had at Peillot.
