I have a new label, and it's kinda blue*. Same grape and winemaking, just a new vintage and packaging.
+ GRAPE: 100% Baga. Organic, biodynamic principles. Grown lovingly in Portugal as part of Dirk Niepoort's approachable natural-wine concept, Nat-Cool.
+ PROFILE: Dry. Light body, medium-plus acidity. Fresh, a touch reductive out the blocks - so let me breathe after a light chill for ~ 30 minutes. I'll reward you with pomegranate, tart cherry, dried herbs, and black lava stone minerality. Fine tannins on the tail. P.S. I give Pineau D'Aunis and Listan Negro vibes if that's your thing! A wine to put on heavy rotation.
+ PRO TIP: Light chill for 15-20 minutes in the fridge. Too cold, and I might read a touch tannic. We're pretty kooky about serving temp here at York Cellars :)
+ FUNDAMENTALS: Wild yeast. All stainless steel winemaking, that undergoes full malolactic fermentation. That lends a nice body to the wine. I'm low ABV, and have zero added sulfites.
