+ PROFILE: 100% certified-organic Chenin Blanc. Nose/palate of white peach and crisp apple. Some chalky lemon in there, and a super-smooth mouthfeel and crisp acidity to round things out.
+ FUNDAMENTALS: Hand-harvested from dry-farmed vines. Wild yeast. Winemaking is all stainless steel, zero oak, for freshness. Aged five months on the lees.
+FUN FACT: The grapes are harvested in separate passes to obtain both natural acidity (early picking) and riper flavors (later picking) for balance.
