+ GRAPES: Certified organic. 45% Ugni Blanc, 30% Clairett, 25% Vermentino grown on ancient seabed soils in the higher elevations of northwest Provence, France.
+ PROFILE: Dry. The wine is pale gold, with medium+ body and lovely texture. Yellow citrus, fresh cream, savory tones, saline finish, and bright acidity. It's like a day at the beach - preferably in the south of France, under an umbrella, with an Pain Bagnat in hand...
+ FUNDAMENTALS: The grapes are all hand harvested and vinified separately, then blended. Fermentation takes place in a combination of large wooden barrels and cement egg vessels. Part of the wine is direct press, whereas a small portion sees light skin-contact. The wine undergoes aging on the lees, which lends an unctuous texture. All wild yeast. No fining or filtration. Low sulfur use, just at bottling.
