+ GRAPE: Organic. 100% Pinot Noir. Estate-grown in Irancy - near Chablis - in northern Burgundy, France. Five generation of winemakers have helmed the house of Givaudin.
+ PROFILE: Dry, medium body. Important serving note! Let me breathe for 30+ minutes, as this wine really opens up with a bit of air and a slight chill. Floral-violet nose, followed by earthy cherry, raspberry tisane, and light wash of peppery dried herbs on the finish.
+ FUNDAMENTALS: Hand-harvested grapes, fermented with wild yeast. Low-intervention winemaking.
