+ GRAPE: Organic. 100% Cabernet Franc, grown in Touraine, Loire Valley.
+ PROFILE: I'm the dry-juicy style of Cabernet Franc. Fun 'n' fresh. Medium body and acidity. Blackberry, black cherry, herbal, poblano pepper, spicy-earth notes. Smooth tannins round things out.
+ FUNDAMENTALS: The grapes are destemmed before a five-week fermentation in cement vats, using only wild yeast, where it rests for approximately one year. The wine is then lightly filtered, but not fined, and bottled using a judiciously small amount of sulfur.
+ PAIRINGS: I'm as delicious with duck confit, sausages, and pates as I am with earthy chickpea or lentil dishes. Super versatile.
