The beauty of doing 'nothing'. Letting it ride, set-it-and-forget-it style, to amazing results. This is one of those 'in-between-ers' of a light red or a super-dark rosé. These guys at Fossil + Fawn are making some of the most delicious wines coming out of the Willamette Valley in our humble opinion.
+ GRAPES: This chillable red has all the Pinots! A blend of red and white grapes: 52% Pinot Gris, 36% Pinot Noir, 12% Pinot Blanc from four organically farmed vineyards in the Willamette Valley, Oregon.
+ PROFILE: Fun and juicy, without being sweet. Medium body. Dry Hawaiian Punch, rhubarb, cherry fruit leather, wet river stones, and hibiscus tea tannins on the finish.
+ SERVING: We recommend giving this a hard chill, then opening and letting it breathe at room temperature before serving ~ 20 minutes later. Too cold and it reads a touch tannic.

'Do Nothing is a chillable, fruity light wine. A mix of red and white fruit was sourced from dry-farmed, own-rooted, organic vines dating back to the 70’s. We fermented whole-cluster carbonically—sealing bunches in vats that were left outside for 30 days; experiencing the natural, diurnal fluctuations in temperature. We literally do nothing during this time. The fruit sits and ferments without any input from us. After pressing, 50% of the juice goes into stainless steel tanks and the remaining balance goes into old French oak barrels where it finishes fermentation over the next five months. The wine is bottled without fining or filtration. The aroma is explosively fruity and fresh, while the palate is light, bright, and rocky.'
