Perched up in northwest Tuscany, this elegant rosso drinks like a lightened-up Brunello.
+ GRAPES: 70% Sangiovese Grosso + a blend of Colorino, Canaiolo and Ciliegiolo. Organic, Demeter-certified biodynamic grapes grown on clay and limestone.
+ PROFILE: Dry, super classic. Medium body + soft acidity and silky tannins. Black plum compote, irony-cherry, earthy and savory.
+ FUNDAMENTALS: Fermented in stainless steel tanks, with a two-week maceration. The wine is then aged for one year in 1000L neutral oak barrels. No fining or filtration [vegan]. A tiny drop of added sulfur, just at bottling for stability.
