+ GRAPE: Organic. 100% Lucido, a.k.a. Catarratto. 'Lucido' means shining or brilliant in Italian.
+ PROFILE: Dry, medium-full body, med-plus acidity. Marzipan on the nose. Lemon chiffon, starfruit, apricot pit, almond shell. Saline finish.
+ FUNDAMENTALS: Hand-harvested grapes. Whole-cluster fermentation using wild yeast in stainless steel tanks. Aged on the lees for texture.
+ PAIRINGS: I'd be delicious with any seafood dishes. Scallops in cream sauce? Check. Monkfish stew? Check. Oysters Rockefeller? A total guilty pleasure.
