+ GRAPE: Organic. 100% Nielluccio (a.k.a. Sangiovese) grown in the mountainous region of Corsica, a French island in the midst of the Tyrrhenian Sea.
+ PROFILE: This leans into 'food wine' territory, and would shine with a pork-and-tomato pasta dish, or slab of aged Pecorino. Dry, medium+ body. Notes of black raspberry, black cherry, craggy stone, spicy Mediterranean herbs. This wine has a true sense of place, evocative of rugged, stone cliffs.
+ SERVING NOTE: Decant or let breathe ~ 30 minutes. A very light 10-15 min chill in the fridge lends freshness.
+ FUNDAMENTALS: Farmed organically, and vinified entirely in concrete tanks for freshness. Bottled with minimal sulfur. Woman winemaker.
