BAE ROUGE 

+ GRAPE: Formerly known as Chenin Noir, this wine is made from 100% Pineau d'Aunis. Certified organic. Grown in the Saumur region of the Loire Valley in France. 

+ PROFILE: I'm a natural wine, and out the gate the nose is reductive, but that blows off to reveal an earthy cherry nose with some air. Let me breathe ~ 30 minutes, and give me a light chill. Dry, light, delicate. Notes of sour cherry, ruby grapefruit pith, black pepper and cloves.

+ FUNDAMENTALS: The grapes are hand harvested, and partially destemmed. Winemaking takes place in concrete tanks for 10 days of carbonic maceration using wild yeast. The wine is then aged in large oak foudres to soften the tannins. Low sulfite wine. 

+ FUN FACT: This lovely, lilting and spicy light red takes grows on limestone and clay soil which imbues a particular orange-red color to the vines' leaves - lending the name 'Bay Rouge' to this wine.
