Positively delightful weeknight warrior is a co-lab between legend, Eric Texier, and proprietor, Cyril Cuche.
+ GRAPES: Always Cinsault-driven, with a smattering of Mourvedre and Grenache. Certified organic grapes are grown outside of Nimes in the Languedoc region of France.
+ PROFILE: Dry, crunchy blue and black fruit. Medium body, modest tannins. I'm a clean natural wine, with tones of blackberry, craggy rocks, birch root and mineral dust. Enjoy me with a slight chill.
+ FUNDAMENTALS: The grapes are partially destemmed, and fermented with wild yeast in concrete tanks. Finished in neutral oak, without fining or filtration, and zero added sulfites. Very stable.
