+ GRAPES: Blend of 60% Merlot, 35% Cabernet Franc, 5% Cabernet Sauvignon. Old vines. Grown organically by the Pueyo family: fifth-generation winemakers on the right bank of Bordeaux, France.
+ PROFILE: The nose gives rich notes of tobacco and coffee, backed by red currant, cassis, and raspberry on the palate. Silky texture. Lightly tannic grip on the finish, yet graceful enough to drink now.
+ FUNDAMENTALS: The grapes are destemmed. Vinified with wild yeast in a combination of vessels to maintain freshness and fruit: 50% in concrete, 50% in oak [25% new oak + 25% second-use barrels]. No fining or filtration. Minimal use of sulfites. Vegan.
