+ GRAPES: Certified organic. 95% Montepulciano, 5% Sangiovese. Estate-grown fruit, grown in Fox Hill Vineyard, Mendocino in California.
+ PROFILE: Dry. Light body. Deep fruit: raspberry tisane, Italian lavender, cherry pastille. Slightly savory. Bright acidity and pleasant grip on the tail. I have some Cerasuolo d'Abruzzo vibes. Give me a medium chill for max enjoyment.
+ PAIRINGS: Would be beautiful with pizza [hot or cold], salume, cacio e pepe pasta - basically anything that wants acidity and tannins for balance.
+ FUNDAMENTALS: Hand-harvested, foot-stomped grapes. Wild yeast. All stainless steel fermentation for six months. Low sulfites.
