+ PROFILE: Dry, medium body. Aromatic nose. On the palate: waxy Asian pear, ripe yellow apple, white grape juice, alkaline vibes. Pithy, pleasantly tannic finish. Pair with Marcona almonds, olives, other savory bites.
+ FUNDAMENTALS: Hand-harvested grapes. Wild yeast fermentation in concrete tanks, with five days of skin contact. Neither fined nor filtered. Low sulfites, just at bottling. Vegan.
