Island wine - but make it Vachon, just off Seattle in Washington State. Grapes are transported by truck and ferry to Vashon Island, where the winery and cellar are located.
+ GRAPE: Organic. 100% Cabernet Sauvignon from the Champoux Vineyard in the Horse Heaven Hills AVA of Columbia Valley, WA. Planted in 1972.
+ PROFILE: Dry. Medium body. Conifer, black cherry, plum, red flowers, tobacco, earthy-cedar. Bright acidity and some mighty fine tannins on the tail. Age worthy. Decant 1-2 hours.
+ FUNDAMENTALS: Hand havested and destemmed. Wild yeast fermentation in stainless steel, followed by 22 months in French oak (25% new). Unfined, unfiltered. 13.5% ABV (remarkably low for a wine of this style).
